Spinach and Burrata pasta

Nutrient packed and delicious!

Spinach is one of the most nutritious vegetables since it´s packed with fiber and plety of vitamins and minerals such as iron and calcium. This simple recipe elevates this humble green to a new level by pairing it with crushed pistachios and creamy burrata to make a balanced and nourishing meal.

🌱Ingredients

  • 1 tbsp olive oil

  • 2 large garlic cloves

  • 2 handfuls baby spinach

  • 2 tbsp pistachio butter (can make your own by blending pistachios and a bit of olive oil)

  • 80g single cream

  • 1 lemon zest

  • 240g fresh pasta

  • 1 burrata (optional) for topping

🌱Method

  • Cook the pasta in a large pot of boiling salted water until al dente. Drain, reserving the cooking water in a bowl

  • Add 1 tbsp olive oil to a pan and bring to medium heat. Add finely chopped garlic, sauté for 2 minutes until golden. Add the spinach and cook for 3 minutes until wilted. Mix in the pistachio butter, cream, several tbsp of pasta water. Stir until getting a homogeneous mix. Season.

  • Transfer everything to a blender and blend until smooth. Return to the pan at medium heat

  • Toss in cooked pasta and stir until it’s well mix work the sauce. Add a splash of pasta water if needed. Remove the pan from heat.

  • Serve and top with burrata, breadcrumbs and chopped pistachios
