Pistachio croissants

Bring your leftover croissants to the next level by stuffing them with pistachio!

This recipe is perfect if you have leftover stale croissants you donĀ“t want to go to waste. Although it is so good sometimes i let the croissants go stale on purpose so I can make it!

šŸ„Ingredients

- 85g water

- 85g honey

- 2 large day old croissants

- 50g butter

- 100g caster sugar

- 1 egg

- 100g ground pistachio

- 1 tsp salt

- Orange zest

- 20g cornflour

šŸ„Method

- Make the syrup by adding the honey and water to a sauce pan an cooking at medium heat for about 5 min while mixing until getting a syrup consistency. Remove from heat

- In a bowl add the butter, sugar and mix until light and fluffy

- Mix in the egg slowly in batches and then the salt, orange zest, pistachio, and finally cornflour. Mix throughly

- Cut the croissant in half, brush lightly with the syrup inside and outside and then spread the filling in the middle and a bit on top

- Decorate with some crushed pistachio and bake at 190C for 10-15min until they are golden brown

- Finally dust with icing sugar and enjoy !

FAQS and TIPS

  • Do I use store bought croissants or bake them from scratch? I used store bough croissants for this recipe and they come out delicious as the frangipane really enhances the flavour and texture

  • I have leftover filling what do I do? You can freeze it or even use it for making frangipane stuffed frech toast or cookies by baking it!
