Banana miso cookie skillet

Banana and miso are a match made in heaven!

This extra easy cookie recipe is perfect for a quick and satisfying weekday bake! The combo of banana, miso and chocolate is nothing but heavenly. And of course the best way to have it is with a big fat scoop of vanilla ice cream on top for balance.

🍪Ingredients

  • 150g ripe banana

  • 120g brown sugar

  • 30g caster sugar

  • 110g (vegan) butter

  • 170g plain wheat flour

  • 1 tbsp miso paste

  • 1 tsp baking soda

  • 100g dark chocolate, chopped

🍪Method

  • Melt the butter in a skillet for 5-8 until it browns

  • In a bowl mash banana, miso. Then add melted butter, sugar and whisk until smooth

  • Add the baking soda, flour and fold in with a spatula

  • Finally add the chopped chocolate and fold in

  • Scrape the dough into a 18cm skillet and bake for 15min at 180C until edges are golden

  • Top with ice cream and chocolate sauce (optional)
