Ricotta French toast
My favourite French toast to date !
It’s no secret I’m obsessed with French toast so here is my latest obsession (I’ve been having it every night for dessert 😇) that I promise will blow your mind !

Ingredients
🍋For filling
50g cream cheese
50g ricotta
20g honey
Lemon zest
🍞For French toast
40g milk (I used oat)
1 egg
1 tsp cinnamon
2 slices brioche bread (can use GF)
Butter to cook
🍞Method
In a bowl mix the cream cheese, ricotta, honey and lemon zest until getting a homogeneous creamy mix
In a separate bowl beat the milk, egg and cinnamon together
Cut two thick slices of brioche bread and flatten them in the middle with a spoon to create space for the ricotta filling
Place the ricotta filling on top of one of the slices with a spoon without reaching the edges. Cover with the second slice on top
Soak this toast in the milk and egg mix for 2 minutes on each side so the bread soaks up
Melt a knob of butter on a frying pan at medium eat. Add your French toast and cook on each side for a couple of minutes until golden brown
Serve hot and dust with icing sugar
FAQS and Tips
Use high quality ricotta if you can for best results!
If you cannot find brioche you can use regular bread by removing the crust and leaving it to soak for 5 minutes in each side
