Halloumi fritters

Healthy, easy and high protein!

These fritters are one of my go to easy, healthy and delicious dinners ! I love pairing them with homemade tahini herbed yogurt for optimal deliciousness 😍

🧀Ingredients

  • 200g zucchini/courgette

  • 100g cherry tomatoes

  • 1 tsp salt

  • 2 eggs

  • 35g wholewheat flour

  • 20g cornflour

  • 125g halloumi, grated

  • 1 tsp oregano

  • Fresh mint and parsley, chopped

  • Olive oil to cook

🍶For tahini yogurt

  • 100g Greek yogurt

  • 1 tbsp tahini

  • 1/2 tbsp lemon juice

  • Fresh mint and parsley, chopped

🧀Method

  • Grate the courgette and chop the cherry tomatoes. Add them to a bowl and salt, rest for 5min. Transfer to a cheese cloth and drain the water as much as possible

  • Beat the eggs in a bowl and add the wheat flour, cornflour and mix well. Add the halloumi, courgette, tomatoes, chopped herbs and mix well

  • Heat a generous amount of olive oil on a pan at medium heat and add big dollops of the fritter mix (should make around 6-8 depending on size)

  • Cook on both sides until golden brown

  • Meanwhile make the tahini yogurt by mixing the Greek yogurt, lemon juice, tahini and herbs

  • Serve fritters with the tahini yogurt on the side and enjoy hot

FAQS and Tips

  • You can store these once they are cooked in the fridge for up to 3 days or alternatively in the freezer for up to a month. Reheat them in the oven at 180C for round 10 minutes

  • Make sure to squeeze well the moisture out of the courgette, nobody likes soggy fritters!
