🍽️ 6 pastries

Ingredients

  • 120g mascarpone

  • 120g heavy cream

  • 70g powdered sugar

  • 1 egg yolk

  • 1 puff pastry (can be GF)

  • 40g dark chocolate, chopped

  • 40g heavy cream

  • 1 tbsp instant coffee

  • Egg wash

  • Cocoa powder

Method

  • Make the mascarpone cream by adding the mascarpone, egg yolk, heavy cream and powdered sugar with an electric handmixer until obtaining medium hard peaks. Transfer to a pipping bag and reserve in the fridge until ready to use

  • Now make the coffee chocolate sauce by mixing the dark chocolate, cream and instant coffee in a pot and brining to medium heat while constantly stirring until it melts

  • Roll out the puff pastry and cut into squares (I did 6). Using a knife cut a half inch edge around the square (two L shapes) leaving two opposite corners uncut. Fold the two cut corners up and over to the other side.

  • Prick the middle part with a fork. Brush the pastries with egg wash.

  • Bake in a preheated oven at 180C for about 15 minutes until golden. Remove from the oven and let the pastries cool down. Press the middle with a spoon to make space to pipe the chocolate and mascarpone

  • Spread a layer of the coffee chocolate sauce at the bottom of the pastry. Then pipe the mascarpone cream o top. Finally dust with some cocoa on top and enjoy
