Crispy salmon popcorn
A 3-ingredient recipe that will become your favourite snack!
These crispy salmon popcorn are one of my go to recipes for having a delicious, healthy and quick snack or dinner. They are packed with protein, gluten free and can be made more satiating by frying them in extra virgin olive oil.
I love having them with some spicy cajun seasoning or with a spicy mayo or alioli on the side but you can be creative and have them with your favourite dip or even as a salad topper! You are also welcome to switch the salmon with canned tuna it works equally well.

Ingredients
320g canned salmon(drained)
3 eggs
100g cornflakes
Cajun seasoning (optional)
Method
In a bowl, crack two of the eggs and beat them with a fork. Add the canned (drained) salmon to another bowl and mash with a fork until obtaining a smooth paste. Mix with the 2 beaten eggs, and seasoning (optional).
Add the cornflakes to a zipltoc bag and seal. Use a rolling pin to crush the cornflakes
Prepare the egg wash for breading by beating 1 egg into a bowl. Transfer the crushed cornflakes to a separate bowl.
Take the salmon and make small balls of around 10-15g. Coat in the beaten egg first and then roll in the cornflakes until completely covered.
At this point you can either fry or airfry your salmon popcorn bites. For frying bring fill a pot with extra virgin olive oil and bring to medium heat. Fry your popcorn in batches for around 3-4 minutes until golden brown. For airfrying do 200C for 10 minutes.
FAQS and Tips
Once you make these popcorn bites you can pop them in the freezer and store them for up to a month until you are ready to fry them.
