Tiramisu cheesecake

The ultimate cheesecake for tiramisu lovers!

Big statment but of all desserts I have created for the page, this is probably my favourite!

Ingredients

✨For the base

  • 120g ladyfingers

  • 50g butter (may not need to use all)

✨For the cheesecake

  • 50g dark chocolate 70%

  • 225g double (heavy) cream

  • 3 tsp instant coffee powder

  • 375g cream cheese

  • 135g ricotta

  • 3 eggs

  • 150g white sugar

  • 5g plain wheat flour (all-purpose flour)

  • 7g cocoa powder

  • Pinch of salt

✨For the tiramisu layer

  • 180g mascarpone

  • 180g whipping cream

  • 1 egg yolk

  • 45g icing sugar

  • 1tsp agar agar (optional, helps it to set)

  • Cocoa powder for dusting

Method

🍰For the cheesecake

  • Make the base by blitzing the lady fingers and slowly adding the melted butter until a paste forms. Pack tightly on a 20cm springform pan lined with a double layer of baking paper

  • Put the chopped chocolate, coffee powder and cream in a bowl and melt over hot water for a couple of minutes. Remove from heat and continue stirring until you have a shiny sauce

  • Blend with a hand blender the cheeses, eggs and sugar. Slowly add the chocolate mix and finally fold the flour, salt and cocoa powder

  • Pour mixture evenly onto the baking tin

  • Bake 35 min in an oven preheated at 180C. Let it COOL COMPLETELY in the fridge

☕️For the tiramisu layer

  • Whip heavy cream with icing sugar

  • Whip mascarpone with the egg yolk and agar agar

  • Fold whipped cream into mascarpone

  • Apply the mix over the cooled cheesecake

  • Put it in a refrigerator for 1 hour

  • Sprinkle it with cocoa before serving

FAQS and Tips

  • I don´t have agar agar can I still make this? Absolutely! The agar agar helps to give more stability to the cream layer but it will still work if you skip it

  • I cannot find ladyfingers can I use normal biscuit instead? Yes any biscuit wil work, e.g. biscoff, gingernuts, tea biscuits, etc.

  • Can I make this gluten-free? Yes, you can use GF biscuits and replace the flour with GF flour

  • Can I substitute the ricotta with cream cheese? Yes, I personally like the flavour and texture the ricotta gives but it also works great with just cream cheese
