Mango chutney Halloumi toast

My current fixation dinner for when I only want to spend 10 minutes in the kitchen but still have something delicious!

It may be my fixation dinner but this toast also makes for a banging breakfast ! Not only it is delicious but very balanced with a high protein content, healthy fats from the avocado and carbs from the bread!

🧀Ingredients

  • 100g halloumi

  • 1 tbsp mango chutney

  • 1/2 avocado

  • 1 sourdough toast

  • Chilli flakes and chopped coriander leaves for topping

🧀Method

  • Pan fry the halloumi with some olive oil until golden

  • Remove from heat and glaze the halloumi with the avocado chutney on one side

  • Toast your sourdough, top with the sliced avocado, halloumi and finally your coriander and chilli flakes

FAQS and Tips

  • Can I use gluten-free bread instead? Yes, you can use any type of bread you like! I personally also love rye bread with this

  • Where do I find mango chutney? It is usually available in the Indian aisle of your supermarket or small Indian convenience stores. Otherwise you can make your own with fresh mangoes, sugar and spices
