Burrata & harissa gnocchi

After my viral pistachio pesto gnocchi recipe I’m back with a second instalment! This time it is even an easier version with harissa paste so you’ve for that spicy kick 🔥

Ingredients
1 tsp olive oil
2 large garlic cloves
1 burrata
1 tbsp harissa paste (1/2 tbsp for less spicy)
4 sundried tomatoes, chopped
1 bunch of fresh basil, finely chopped
1 pack of gnocchi (2 servings)
Grated Parmesan to taste
🌱Method
Cook the gnocchi in salted boiling water following package instructions. Drain and reserve some of the cooking water
In a bowl mix the harissa and the burrata
Bring the olive oil to medium high heat in frying pan. Then add the finely mince garlic and cook for a couple of minutes until golden. Incorporate the sundried tomatoes and stir for 1 min. Add the gnocchi, the harissa burrata mix and a bit of the reserved cooking water. Mix well for a couple of minutes with a wooden spoon until everything comes together and the burrata melts down. Stir in the basil (reserve some for decoration) and turn off the heat
Serve hot on a bowl topped with some basil and grated Parmesan (optional)
FAQS and Tips
If you cannot find burrata you can substitute with 100g mozzarella plus 60-80ml of single cream
You can substitute the harissa paste with gochujang it is also delicious!
You can make gnocchi from scratch if you are feeling like it! I have a high protein butter bean version that I highly recommend trying
