Pumpkin spice churro

These seasonal pumpkin spice churro bites are a must try! They take less than 20 minutes to make and are perfect for an afternoon stack, breakfast (as we do it in Spain) or even dessert🔥

🎃Ingredients
For churros
125g pumpkin purée
230g water
250g plain wheat flour
1 tsp pumpkin spice
1 tsp baking powder
1 tsp salt
1/2 tbsp olive oil
Olive oil for frying
100g sugar + 1 tsp pumpkin spice
For Spanish hot chocolate
1 liter milk
1 cinnamon stick
400g semisweet dark chocolate

Method
Add the pumpkin purée and water to a saucepan and bring to boil. Turn off the heat
In a big bowl add the flour, pumpkin spice, baking powder, salt and mix. Then add the pumpkin purée you just boiled and quickly mix with a wooden spoon (a whisk also works). Once you get a sticky dough add the olive oil and mix for 2 more minutes. Leave it to rest for 5-10min covered with a kitchen cloth
Meanwhile add olive oil to a frying pan so it’s about 3 high and bring to medium-high heat
Transfer dough to a pastry bag with a large star-shaped tip. Pipe a short strip of batter directly into the hot oil and cut it with scissors
Fry churros on both sides until they become golden brown and then transfer to kitchen paper to remove excess heat
Coat churros evenly with the sugar pumpkin spice mixture
For making the hot chocolate add the milk and cinnamon stick to a saucepan and bring to boil for 5 min to infuse the milk. Remove the cinnamon stick and add the chocolate and stir until it melts and fully incorporates into the milk
FAQS and Tips
You can make your own pumpkin spice mix by mixing in a bowl 3 tbsp of ground cinnamon, 2 tsp ground ginger, 2 tsp nutmeg, 2 tsp all spice and 1 tsp ground cloves. This can be stored in a container so you can make all the pumpkin spice desserts!
