Mocha coffee toast
A mocha version of the Tiktok viral coffee toast !
Inspired by the viral Rotiboy / Mexican coffee buns but making it way easier by using toast slices instead of having to make your own dough. I added my own spin by including a cream cheese filling & chocolate in the topping which adds more depth of flavour and perfectly complements the coffee

🍽️ 3 toasts
Ingredients
60g butter
60g powdered sugar
1 egg
75g plain flour
2 tsp cocoa powder
1 tbsp water
2 tsp instant coffee
3 slices of bread
For the cream cheese filling
150g cream cheese
40g powdered sugar
Method
In a small bowl dissolve the coffee with the tablespoon of warm water.
In a bowl mix the melted butter, powdered sugar and egg with a whisk. Add the dissolved coffee. Finally add the plain flour and cocoa powder and mix again.
Transfer mix to a piping bag and leave in the refrigerator to cool down for at least 30 minutes.
Meanwhile prepare the bread by cutting into triangles and. prepare the cream cheese filling by mixing the sugar and cream cheese in a bowl. Spread a generous layer of the cream cheese on one slice of bread and then cover with the other slice.
Arrange the toasts on a baking tray covered with parchment paper and pipe the coffee mocha mixture on top of the toasts.
Bake in a preheated oven at 180C until the top is firm and cripsy.
