Mascarpone strawberry puffs

A delicious easy summer pastry !

This is probably one of the easiest summer bakes you can make! I used store bought puff pastry for ease so it take less than 10 min of prep ☺️ Best part is that you can get creative with the fillings and try a variety of fruits such as mango, cherries or raspberries

🍓Ingredients

  • 300g strawberries

  • 1 pack puff pastry

  • 40g butter, melted

  • 110g g mascarpone

  • 225g double cream

  • 30g icing sugar

  • 1 tsp vanilla extract

🍓Method

  • Take the puff pastry out of the package, place on a baking tray and divide into equal squares by cutting it with a sharp knife.

  • Brush the top of each pastry square with the melted butter. Fold each square in half to form a triangle. Bake at 180C for 20-25 until they become golden brown and puff up. Remove from the oven and allow to cool

  • Meanwhile prepare your mascarpone cream. Add the mascarpone, vanilla and icing sugar to a bowl and beat until you get a homogenous mix. Then add the double cream and keep beating at medium speed until getting a whipped cream texture

  • Transfer to a pipping bag and pipe a generous amount into the inside of each puff pastry triangle. Finally stuff your strawberry slices

FAQS and Tips

  • You can fill it with your favourite fruit such as mango slices, raspberries or cherries!

  • This is best enjoyed right after making it as otherwise the puff pastry will became soft
