Lemon ricotta orzo

A very summery orzo recipe!

Orzo is currently one of my fixation foods so I had to come up with a new version more in tune with the incoming amazing summery weather. This version is super creamy, cheesy and refreshing thanks to the combo of ricotta and orzo 😍

🍋Ingredients

  • 125g ricotta

  • 1 egg

  • 50g Parmesan

  • Lemon zest

  • 200g uncooked orzo

🍋Method

  • Cook the orzo following package instructions until al dente. Drain and reserve pasta water

  • In a bowl mix the ricotta, egg and grated Parmesan. Season with salt and pepper. Slowly add some of the orzo cooking water until obtaining a homogeneous creamy mix

  • Add the cooked orzo to a pan along with the ricotta mix. Cook at medium heat while continuously stirring for 1-2 minutes until all the orzo is well coated in the sauce

  • Serve with some extra grated Parmesan and lemon zest

FAQS and Tips

  • For grating the lemon zest I recommend getting a microplane as using a regular grater is very hard

  • A good quality ricotta makes a huge difference so try sourcing git from an Italian deli or buying an Italian brand
