Lemon curd brownies
The ultimate brownie recipe for lemon dessert lovers !
I am a big fan of the texture of white chocolate brownies bur I sometimes find them a bit more boring in flavour not going to lie. That’s why I’ve upgraded them by adding lemon curd so they have a fresh and citrousy flavour that is perfect for this spring wheather 😍

🍋Ingredients
350g caster sugar
3 eggs
1 egg yolk
100g butter
100g white chocolate
80g vegetable/sunflower oil
80g lemon curd
Zest of 2 lemons
2 tbsp lemon juice
250g plain flour
Pinch of salt
For the lemon glaze
100g icing sugar
Juice of one lemon
🍋Method
In a pot add the butter, white chocolate and melt over medium heat while stirring continuously to avoid burning
In a separate bowl beat the sugar, eggs and egg yolk until pale and fluffy for about 5 minutes. Add the butter/chocolate mix, oil, salt, lemon curd, lemon zest and lemon juice and mix until just combined
Add the sifted flour to the wet ingredients and mix over low speed. Pour the batter into a 20x20cm baking pan lined with parchment paper. Bake for 40-45 min at 170C. Remove from the oven and leave to cool for at least 30 min
Meanwhile make the lemon glaze by icing the icing sugar and lemon juice in a bowl with a spoon until obtaining a smooth consistency
Pour the icing sugar over the brownies and spread evenly with a spoon. Slice and enjoy!
