Gochujang & Halloumi orzo

Easy, healthy and delicious!

This recipe not only includes everyone’s favourite gochujan Korean paste but also caramelised honey halloumi for a great flavour contrast and protein boost (22 grams per portion)

🍚Ingredients

  • 1 tbsp olive oil

  • 1 white onion

  • 40ml white whine (optional)

  • 2 handfuls of cherry tomatoes

  • 1 tbsp gochugan

  • 1 tbsp tomato paste

  • 160g orzo pasta

  • 380-400ml vegetable stock/water

  • 80g double cream

  • 120g halloumi

  • 1/2 tbsp honey

  • chopped parsley

🍚Method

  • Finely chop the onion and fry at medium heat with 1 tbsp olive oil until golden brown. Deglaze the pan with the white wine. Then add the cherry tomatoes and cook for 5 more minutes until soft. Add the gochujan, tomato paste and mix well

  • Add the orzo and mix well to coat it in the sauce. Then add the vegetable stock or water and bring to a low boil. Cover let it simmer until all the liquid is absorbed (15-20 minutes) and the orzo is al dente

  • Meanwhile pan fry your halloumi until golden brown. Turn off the heat and add the honey so it coats the cheese

  • Finally stir in the cream and serve the orzo topped with the halloumi and some chopped parsley

FAQS and Tips

  • Can I substitute the wine as I don’t drink alcohol? Yes you can just use water instead of wine to deglaze the pan although the alcohol evaporates with the cooking!

  • Can I use single cream instead of double cream? Yes it also works very well, in fact I make this recipe most of the time with alpro single soy cream
