Dulce de Leche Banana bread

The ultimate banana bread (I promise!)

As most of Instagram I am also a banana bread obsessed, I mean who doesn´t love a one bowl bake that just tastes like fairytales? And those who know me well know that my second obsession is dulce de leche so I decided to mix both for the ultimate banana bread. It´s fudgy, moist and has an addictive caramelised flavour that will keep you reaching for a second slice!

Ingredients

  • 380g ripe banana

  • 100g light brown sugar

  • 390g dulce de leche

  • 110g butter, melted

  • 1tsp vinegar + 1tbsp milk

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 120g plain wheat flour

  • 80g almond flour

  • 100g dark chocolate, roughly chopped (optional)

  • Coconut flakes for topping

Method

  • In a bowl mash the bananas

  • Incorporate the sugar, dulce de leche, melted butter and whisk until getting a homogeneous mix

  • Mix the vinegar with the baking soda and milk in a small bowl until bubbles appear, then add to the batter and mix

  • Add the baking powder, salt, cinnamon

  • Finally shift in the plain flour and add almond flour. Incorporate the chopped chocolate

  • Pour batter in a loaf tin lined with parchment paper and top with the coconut flakes

  • Bake at 180C for 1hour

FAQS and Tips

  • Can I substitute the almond flour for regular flour? Yes you can, it will be a bit more bready in texture but still delicious

  • I cannot find dulce de leche. You can actually make your own by placing a can of condensed milk in pot of boiling water for 3 hours to make your own dulce de leche
