Crispy Parmesan broccoli

My new favourite way of having broccoli

This has definitely become my favourite way of having broccoli. It really crisps you thanks to baking it in the oven and the layer of Parmesan cheese really adds the ultimate crunch factor 🔥

🥦Ingredients

  • 1 large broccoli head

  • Parmesan cheese (can be vegan)

  • 2 tbsp olive oil

  • 1/2 tsp paprika

  • 1 tsp Italian herbs

  • 1 tsp garlic powder

  • Salt and pepper

🥦Method

  • Cut the broccoli roughly into big chunks. Boil pieces in a saucepan filled with water for 6-8min (you can also cook it in the microwave). Remove from heat, drain the water and leave it to cool for 5 minutes

  • Meanwhile prepare the dressing by mixing in a bowl the olive oil, spices, salt and pepper

  • Transfer broccoli to a baking tray covered with parchment paper. Smash each piece until flat with a glass

  • Brush the smashed broccoli with the dressing. Then grate the Parmesan cheese on top (make sure to be generous, it is never too much cheese!)

  • Bake at 180C, fan on until crispy and golden for 20-30min (this may vary depending on the oven). Remove from the oven and enjoy hot

FAQS and Tips

  • Make sure you don’t over cook the broccoli otherwise it becomes mushy and it won’t crisp up
