Cheesy polenta fries

Potato fries move away because these cheesy polenta are fire!

This may be one of my all time favourite creations! The crispy polenta is packed with umami flavour, and filled the the most dreamy melty mozzarella cheese that just oozes out as you bite into it 😍

🌱Vegetarian (Vegan option)

Ingredients

  • 100g polenta

  • 700ml water (or vegetable stock)

  • 1 tsp salt

  • 1 tsp Italian herbs

  • 1 tsp garlic powder

  • 100g shredded mozzarella (you can use vegan )

  • Olive oil to cook

Method

  • Add the vegetable stock (or water) and polenta to a medium sized pot and bring to a boil. Mix with a wooden spoon until obtaining a homogeneous mix

  • Once boiling turn the heat down to a simmer and continue cooking for 3-5 minutes until it thickens. Add the Italian herbs and season to taste

  • Take a small rectangular container and add half of the polenta mix. Top with the shredded mozzarella and then add the rest of the polenta mix. Even out with a spoon and tap onto the counter to make sure it’s even. Cover with a lid and transfer to the fridge to cool down for at least one hour. Remove from the container by inverting it into a cutting board. Cur with a sharp knife into 2.5 thick fries.

  • When ready to cook add around 2tbsp olive oil to frying pan and bring to medium high heat. Add your polenta fries and fry until golden on all sides. Transfer to some kitchen paper to drain excess oil. Serve immediately topping it with some extra dried herbs

FAQS and Tips

  • You can also cook the fries in the oven at 190C, grill on for 25min until golden brown
