Biscoff Banoffee pie

Banana and dulce de leche are a match made in heaven!

If you are a fan of banoffee pie you need to try my version with an addictive salted biscoff layer, dulce de leche, bananas and lots of fluffy cream 🔥

🍌Ingredients

  • 150g biscoff biscuits

  • 65g butter

  • 1 tsp salt

  • 250g Dulce de leche

  • 350g double (heavy) cream

  • 3 large bananas

  • Cocoa powder for dusting

🍌Method

  • Blitz the biscuits in a food processor or blender until they become fine crumbs transfer to a bowl and mix with the melted butter and salt

  • Line the bottom of a 20cm round baking tin with parchment paper and add your biscuit mix. Press with the bottom of glass or ramekin against the base of the tin until evenly spread. Refrigerate for 10-15 minutes so it hardens

  • Meanwhile whip the heavy cream with a whisk or electric mixer in a bowl until soft peaks form

  • Remove the tin from the fridge and spread the dulce de leche across the biscuit base. Then slice the peeled bananas in half lengthwise and arrange on top of the dulce de leche

  • Finally spoon the whipped cream on top of the bananas and even out with a scraper or knife

  • Refrigerate for at least 4 hours or overnight. Before serving remove from the tin carefully and dust with cocoa powder on top

FAQS and Tips

  • I cannot find dulce de leche. You can actually make your own dulce de leche by boiling a can of condensed milk for around 3 hours (should be completely submerged in water the entire time).

  • Can I swap biscoff for something else? Of course you can use regular tea biscuits, digestives or gingersnaps also work very well
