Banana cheesecake muffins

Delicious breakfast muffins with a creamy cheesecake filling

If you are a banana bread lover you will love these muffins ! They are perfect for an easy prep in advance breakfast or a delicious snack ! I’ve added with a delicious cheesecake filling for a more boojie version but they are also amazing on their own 😍

Ingredients

🧁For muffins

  • 140g Greek yogurt

  • 200g ripe banana

  • 250g plain flour

  • 100g caster sugar

  • 1tsp baking powder

  • 2 eggs

  • 120g butter

  • 100g chocolate chips

🥣Oat crumble

  • 40g plain flour

  • 40g oats

  • 50g butter at room temperature

  • 40g caster sugar

  • Pinch salt

🧀Cheesecake filling

  • 200g cream cheese

  • 60g icing sugar

Method

  • In a bowl beat the eggs and sugar with a whisk until pale and fluffy for about 3 minutes. Add the melted butter, mashed bananas yogurt and mix again. Add the baking powder and shifted flour and fold. Finally add the chocolate chips and mix well

  • For the crumble mix throughly all ingredients in a bowl

  • For the cream cheese filling add the ingredients into a bowl and mix until we’ll combined. Transfer to a piping bag and leave it in the fridge while the muffins bake

  • Scoop muffin mix into a muffin tray lined with paper muffin forms. Finally sprinkle with the crumble. Bake for 35 min at 180C. Let them cool completely and then make a hole at the bottom of the muffin with a knife and pipe in the cream cheese

FAQS and Tips

  • You can add some lemon zest or vanilla to the cheesecake mix for some extra flavour
