Sweet potato puffs

Crispy and cheesy sweet potato parcels of joy !

This 3-ingredient cheesy puffs are the perfect dinner snack or side dish that goes about with any meal ! The tapioca starch gives them a chewy and stretchy texture while the cheese adds great flavour 🔥

If you are not the biggest fan or roasted sweet potatoes because they end up dry this is the recipe for you. My recipe creates flavourful sweet potatoes with a crispy exterior and a cheesy and stretchy middle.

So what makes this recipe special? The secret is to add tapioca starch , which derives from a tuber called cassava. Cassava is a very starchy vegetable, even starchier than potatoes! Similar to cornstarch it has a very neutral flavour but it has the advantage that it gives recipes a very stretchy texture due to its starch content. Best of all it is also completely gluten free.

🧀Ingredients

  • 250g sweet potato

  • 35g shredded mozzarella

  • 60g tapioca starch

🧀Method

  • Pierce the sweet potato with a fork and cook in the microwave for about 5 minutes (depending on your microwave it may need up to 10min) until soft. Slice it in half and scoop out the flesh so you have 250g of sweet potato

  • Mix the sweet potato with the tapioca starch and the mozzarella and knead for a couple of minutes until obtaining a dough. Season with salt

  • Transfer the dough to a container and press it with a spoon so it has an even surface. The height should be around 2.5cm. Cover and leave it to rest in the fridge for about 30min until it is solid. Carefully remove from the container aiding yourself with a knife to separate the dough from the edges

  • Cut the dough into squares (around 3-4cm) with a knife

  • Heat a pan with oil and fry the squares at medium high heat for a couple of minutes until golden on each side. Transfer to a kitchen paper to remove excess oil and enjoy hot

FAQS and Tips

  • You can use cornstarch instead of tapioca flour although they won’t be as stretchy so for optimal results I recommend sticking to the tapioca starch

  • You can add your favourite seasoning besides salt such as garlic powder or Mexican Tajin !

  • I served the sweet potato puffs with homemade alioli. You only need one egg, minced garlic, salt and extra virgin olive oil and the result is way better than store bought!

  • Can I use pumpkin instead? Yes just roast your pumpkin in the oven and use instead of the sweet potato.
