PSL Tiramisu

One for the pumpkin spice latte lovers!

As a PSL lover I had to make this twist on one of my favourite desserts: tiramisu! This bake is the embodiment of fall and if you want to impress your friends (or yourself😉) with something different it is a must try !

🎃Ingredients

  • 3 egg yolks

  • 70g caster sugar

  • 165g pumpkin puree

  • 350g mascarpone

  • 1/2 teaspoon pumpkin pie spice

  • 1/2 teaspoon vanilla essence

  • 200ml heavy cream

  • 3 cups strong coffee + 1 tbsp caster sugar

  • 200g ladyfingers

  • Mix of cocoa powder and cinnamon to dust on top

🎃Method

  • In a large bowl beat the egg yolks and sugar until pale and fluffy. Then beat the mascarpone, pumpkin purée, pumpkin spice, vanilla.

  • In a separate bowl whip the heavy cream until stiff peaks form. Fold cream it into the mascarpone mix

  • In bowl, whisk the brewed coffee with the sugar until it’s dissolved. Dip both sides of ladyfingers in the coffee and arrange them in a single layer on a square dish. Spread half of the pumpkin mousse on top. Repeat the layering one more time, ending with a layer of the pumpkin mousse.

  • Cover and refrigerate the tiramisu overnight

  • Sprinkle with the cocoa cinnamon powder before serving

FAQS and Tips

  • Instead of cocoa powder you can grate some dark chocolate on top if you want it extra indulgent!

  • If you are in a rush you can refrigerate it for only 4 hours although I always recommend overnight to allow the flavours to develop more
