PSL Tiramisu
One for the pumpkin spice latte lovers!
As a PSL lover I had to make this twist on one of my favourite desserts: tiramisu! This bake is the embodiment of fall and if you want to impress your friends (or yourself😉) with something different it is a must try !

🎃Ingredients
3 egg yolks
70g caster sugar
165g pumpkin puree
350g mascarpone
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla essence
200ml heavy cream
3 cups strong coffee + 1 tbsp caster sugar
200g ladyfingers
Mix of cocoa powder and cinnamon to dust on top

🎃Method
In a large bowl beat the egg yolks and sugar until pale and fluffy. Then beat the mascarpone, pumpkin purée, pumpkin spice, vanilla.
In a separate bowl whip the heavy cream until stiff peaks form. Fold cream it into the mascarpone mix
In bowl, whisk the brewed coffee with the sugar until it’s dissolved. Dip both sides of ladyfingers in the coffee and arrange them in a single layer on a square dish. Spread half of the pumpkin mousse on top. Repeat the layering one more time, ending with a layer of the pumpkin mousse.
Cover and refrigerate the tiramisu overnight
Sprinkle with the cocoa cinnamon powder before serving
FAQS and Tips
Instead of cocoa powder you can grate some dark chocolate on top if you want it extra indulgent!
If you are in a rush you can refrigerate it for only 4 hours although I always recommend overnight to allow the flavours to develop more
