Pistachio pesto garlic bread

A summery version of my viral garlic bread!

After my VIRAL harissa garlic bread I had to make a summery version with one of my favourite things: pistachio pesto. I promise once you try this you won’t want your garlic bread any other way 🔥

🌱Vegetarian

🍽️ 2-3 portions

🌱For the pesto

  • 25g fresh basil

  • 20g Parmesan cheese

  • 30g pistachio

  • 1 garlic clove

  • 60-80ml olive oil

  • Salt to taste

🥖For the garlic bread

  • 300g shredded mozzarella cheese

  • 1 large bread loaf (can use GF)

🥖Method

  • Add the basil, grated Parmesan, pistachio, garlic, olive and salt to a food processor and blitz until getting a paste

  • Cut your bread loaf in half and spread with the pistachio pesto. Top with as much shredded mozzarella as you want. Transfer to a baking pan covered with parchment paper

  • Bake at 180C, grill on until the cheese has melted and become golden brown (about 10-15 min)

  • Serve warm (I topped with some chopped fresh basil in the end)

FAQS and Tips

  • You can also use store bought pesto if you are in a rush although nothing beats a good homemade pesto
