Pistachio mozzarella puffs

Ingredients

  • 1 sheet of puff pastry

  • 300g of mozzarella (fresh or shredded)

  • Pistachio pesto

  • 1 egg

  • Sesame seeds

💚Method

  • Cut your puff pastry into small squares

  • Place a dollop of pesto in the middle and then top with the shredded mozzarella. Finally add a pinch of salt

  • Bring one edge of the pastry over the other to form a triangle. Carefully seal the edges with your fingers, place on a baking tray lined with parchment paper and then seal edges with the tip of a fork

  • Beat the egg in a bowl and brush the triangles. Top with some sesame seeds and make a small incision in the middle

  • Bake at 180C fan on for 15-20 min until golden brown

  • Remove from oven and leave it to cool for 5 minutes before serving

FAQS and Tips

  • Don’t worry if some of the mozzarella oozes out, its part of the charm of these puffs!

  • For homemade pesto recipe just add the following ingredients to a food processor and blend until smooth : 25g fresh basil, 20g Parmesan cheese , 30g pistachio, 1 garlic clove, 60-80ml olive oil, Salt to taste

  • You can also use store bought pesto if you want to save time although nothing beats homemade pesto !
