Spaghetti fritters

The crispiest and easiest appetiser!

If you are looking for a fun and mega easy to make snack or starter (or simply have a lot of leftover pasta) these are your guys ! They get super crispy and have an addictive savoury flavour from the Parmesan

🍽️3 portions

🍝Ingredients

  • 80g dried spaghetti

  • 30g grated Parmesan/manchego

  • 20g single cream

  • 30g bread crumbs

  • 1 egg

  • 1 tsp garlic powder

  • Salt and pepper

🍝Method

  • Boil pasta until it becomes al dente

  • While the pasta is boiling whisk egg with garlic powder, cream, cheese and bread crumbs in a bowl. Add around 3 tbsp pasta water until it becomes a paste

  • Add boiled pasta to the bowl and give it a mix using a fork. Add a bit of the pasta water if necessary until you get an homogenous mix

  • Heat olive oil to medium high heat in a frying pan so it reaches around 2cm height

  • Using a fork, take little bit of the spaghetti and roll it with the aid of a fork on a spoon and carefully drop it to the hot frying pan. Fry it at a medium high heat until it becomes golden on each side. Transfer to kitchen roll to drain the excess oil

  • Shave some extra Parmesan on top and enjoy hot !

FAQS and Tips

  • The final pasta and parmesan mix should be quite thick so it all comes together when you roll it on the spoon

  • I’m serving it with a cacio e pepe bechamel sauce. Simply make a light bechamel and add some pepper and Parmesan into the mix
