Parmesan rice crackers

The perfect recipe to use up leftover rice!

If you alway cook way more rice than you should and end up with tones of leftovers I’ve got you! This is the simplest 3-ingredient recipes that only uses ingredients that you probably already have in your pantry.

I love making this recipe for a lazy dinner or even breakfast! These crackers are amazing topped with some avocado, tajin and even some scrambled or fried eggs. I love to use them as a substitute for bread and the parmesan cheese and egg add that extra filling healthy protein!

🍽️ 3 parmesan rice crackers

Ingredients

  • 200g cooked rice

  • 50g grated parmesan

  • 1 egg

  • Optional: 1tsp paprika, 1tsp herbs

Method

  • In a bowl mix the cooked rice, grated parmesan, beaten egg and spiced. Mix well with a spoon until obtaining a homogenous mix.

  • Heat a frying pan with 1tsp of olive oil (medium heat). Add 1/4 cup of the rice mix and flatten it with a spatula or back of a spoon. Cook for 3-4min until golden brown and then flip and cook on the other side. Serve and enjoy warm
