Parmesan churros

A great savoury twist on Spanish churros !

As a Spaniard I’m obsessed with churros and chocolate but reverently I tried a savoury twist at a London restaurant so decided to recreate them at home and let me tell you they are 🔥 I served them with some cheese white sauce but you can also have them on their own !

🍽️ 2 portions

🧀Ingredients

  • 30g butter

  • 1 tsp salt

  • 10g caster sugar

  • 120g plain flour

  • 80g Parmesan cheese, grated

  • 2 eggs

🧀Method

  • Combine the butter, salt and sugar in a pot with 200ml of water. Bring to a boil and add the flour. Cook over a medium heat, whisking with a spoon for 2-3 mins until the sides of the pan are clean. Transfer the dough to a clean bowl and let it cool down for 10min.

  • Add the grated cheese and beat into the dough.

  • Now beat in the eggs one by one until you have a smooth, glossy choux paste.

  • Transfer to a piping bag with a star nozzle. Preheat a pot of oil to 180°C.

  • Pipe the churros into the hot oil, snipping off with scissors at the length you’d like and fry for 2-3 mins until golden. Transfer to some kitchen paper to drain off excess oil.

  • Serve immediately with some grated Parmesan and cheese bechamel sauce (optional)

FAQS and Tips

  • You can substitute the Parmesan cheese for another hard cheese such as Manchego
