Orzo carbonara
A must try for carbonara lover!
Carbonara was my favourite pasta dish when I ate meat and now that we have incredible vegan substitutes you can make a pretty badass copycat! I’m using orzo pasta instead of tradicional spaghetti and I promise it works 🥰

🥓Ingredients
100g uncooked orzo
60g vegan bacon (I used @this)
2 egg yolks
25g pecorino Romano /Parmesan
Pepper
🥓Method
Cook the orzo in boiling salted water following package instructions for less than 2 minutes so it’s al dente.
In a bowl add the egg yolks, grated cheese, grinded pepper a bit of the orzo cooking water and mix until getting a smooth paste
In a pan add a drizzle of olive oil , add your vegan cut into slices and cook until crispy at medium high heat for 3minutes. Add the drained orzo to the pan and mix. Turn off heat and add the egg yolk mix with some of the cooking water if needed and mix non stop until it emulsifies (about 2-3 min)
Serve immediately and top with some freshly grated cheese if you wish
