Mocha coffee toast

A mocha version of the Tiktok viral coffee toast !

Inspired by the viral Rotiboy / Mexican coffee buns but making it way easier by using toast slices instead of having to make your own dough. I added my own spin by including a cream cheese filling & chocolate in the topping which adds more depth of flavour and perfectly complements the coffee

🍽️ 3 toasts

Ingredients

  • 60g butter

  • 60g powdered sugar

  • 1 egg

  • 75g plain flour

  • 2 tsp cocoa powder

  • 1 tbsp water

  • 2 tsp instant coffee

  • 3 slices of bread

For the cream cheese filling

  • 150g cream cheese

  • 40g powdered sugar

Method

  • In a small bowl dissolve the coffee with the tablespoon of warm water.

  • In a bowl mix the melted butter, powdered sugar and egg with a whisk. Add the dissolved coffee. Finally add the plain flour and cocoa powder and mix again.

  • Transfer mix to a piping bag and leave in the refrigerator to cool down for at least 30 minutes.

  • Meanwhile prepare the bread by cutting into triangles and. prepare the cream cheese filling by mixing the sugar and cream cheese in a bowl. Spread a generous layer of the cream cheese on one slice of bread and then cover with the other slice.

  • Arrange the toasts on a baking tray covered with parchment paper and pipe the coffee mocha mixture on top of the toasts.

  • Bake in a preheated oven at 180C until the top is firm and cripsy.
