Mocha horchata
My favourite summer cooler !
It’s summer so I am all for a good refreshing and delicious drink! And mexican horchata comes at the top of my list since it is very easy to make at home with just a handfull of ingredients you probably already have in your pantry.
I’ve decided to add a spin to mine (because a girl needs caffeine) by including some coffee and cocoa in the drink but this is completely optional!
So what is horchata?
Horchata is a name given to several sweet cold beverages enjoyed in Hispanic countries that actually originated in north Africa and was made with tigernuts, which is the form still traditionally consumed in Spain. In Mexico and other south american countries such as Guatemala, horchata is made with rice instead and usually sweetened with sugar or condensed milk and flavoured with some cinammon and vainilla. Other variations also include milk or almonds in the mix, which results in a creamier version.

🍽️ 4 portions
Ingredients
2 cups rice
1 large cinnamon stick
4 cups water
2 espresso shots
1 tbsp cocoa powder
300g condensed milk
1 can evaporated milk
Method
Mix the water, cinnamon and rice and leave it to soak overnight in a covered bowl or container
Transfer everything to a blender and blend at high speed for a minute. Pass this twice through a fine mesh sieve into a pitcher or bowl. Add the condensed milk, evaporated milk, 1/2 cup of cold water and the cocoa expresso. The cocoa expresso is made my adding the cocoa powder into the espresso and mixing it very well until it dissolves
Fill a glass with ice and pour over your horchata, give it a good stir and enjoy!
