The pie you’ll want to get married to!

This one pot pie inspired by the viral Marry me recipe is the perfect quick and easy dinner that is not only delicious but packed with protein and nourishing vegetables. And I can promise anyone that tries this pie will want to marry you becasue it is so delicious!

While this pie is filled with the classic marry me ingredients (sundried tomatoes, onion, spinach, cream, and spices), I’ve added my own twist and susbtiuted the chicken for halloumi cheese which offers an excelent veggie alternative packed with protein and more flavour.

Marry me recipe went viral for a good reason and it is that it is creamy, and packs such a flavour punch with the sundried tomatoes and spices. The crispy puff pastry of the pie really elevates this recipe to another level as it proides a great constrast of texture.

This recipe is a crowd pleaser and you can make it for a dinner party or half the amount in this recipe for an easy dinner for 2 people! You only need one pan and about 45min and very little prep and effort to make it.

Ingredients

  • 1 tbsp olive oil

  • 1 onion

  • 2 garlic cloves

  • 15g flour

  • 350g single cream (or milk)

  • 8 sundried tomatoes

  • 60g spinach

  • 1 tsp oregano

  • 1 tsp smoked paprika

  • 450g halloumi cheese

Method

  • Take a pan, add the olive oil and bring to medium heat. Add the chopped onion, garlic and cook for 20min covered with a lid while occasionally stirring until it becomes soft and translucent

  • Add the flour and cook for 2 min while stirring. Incorporate the milk, and keep stirring until the sauce thickens. Add the chopped sundried tomatoes, spinach, oregano, paprika, halloumi and season to taste. Remove from the heat and transfer to an oven safe dish if you pan is not

  • Roll out the puff pastry and cut into squares, arrange on top of your pie on a circular motion so it’s completely covered in pastry. Brush with some beaten egg so it turns golden when you bake it

  • Bake the pie at 180C for 20min or until the pastry turns golden and crispy. Remove from the oven and enjoy while hot !

FAQS and Tips

  • You can use other cheeses of your choice such as panner

  • The filling can be made in advance and kept in the fridge for up to 3 days until you are ready to bake the pie with the puff pastry on top
