Ingredients

  • 2 potatoes

  • 50g butter

  • 40g honey (can use vegan honey or maple syrup)

  • 1 tsp chilli flakes

  • Olive oil for frying

Method

  • Finely slice your potatoes (I like to leave the skin on) and transfer to a bowl with cold water. Leave them there to release the starch for 30-60min

  • Drain the water, rinse with cold water a couple more times and pay y dry the potatoes with kitchen paper

  • Heat a generous amount of olive oil in a frying pan (about 2cm high) to medium high heat

  • Fry the potatoes in batches until they get golden brown in colour on both sides

  • Transfer to kitchen paper to drain off excess oil. You can keep them in the oven at 100C while you cook all the potatoes so they don’t get cold

  • Make the hot honey butter sauce by melting the butter in a pan at medium heat and cooking for 2-3 min until it browns. Turn off heat and add chilli flakes and honey

  • Toss the crisps in the hot honey butter sauce

FAQS and Tips

  • You can adjust the amount of honey butter to pour on your crisps according to your preference! Personally I like to be generous but you can start conservative and then add more if you want !

  • If you are in a rush you can skip the 30 min soak and rinse the potatoes 3 times in cold water 4o quickly remove the starch
