Halloumi tater tots
The ultimate tater tots !
This is the ultimate match made in heaven for potato and halloumi lovers! You only need 3 ingredients and the result is a crispy on the outside and savoury and cheesy inside.
Tater tots are a crowd pleaser because who doesnt like a good crispy potato recipe? And while the frozen pre-packaged stuff they sell at the supermarket is pretty decent, nothing matches a good home made version. And did I mention this version also includes halloumi? So not only you are skipping the additives and preservatives but also adding tons of flavour and making it a more balanced recipe with extra protein from the halloumi.
While I prefer frying these tater tots in extra virgin olive oil to add extra flavour and crispiness, you can also bake or air fry these!

Ingredients
300g potatoes
100g halloumi
30g cornstarch
Olive oil to fry
Method
Take the potatoes, cut them into quarters and transfer to a pot filled with water. Bring them to a boil for 10 minutes to parboil them. This should be enough so they become fork tender, but make sure you don’t overcook them as they need to hold their shape so you can grate them
Drain all the water and leave the potatoes to cool down for at least 10 minutes. Then grate them with the coarse side of a grater. Likewise, grate the halloumi
To a bowl, add the grated halloumi, potatoes, cornstarch and season to taste. Mix well with your hands until all the ingredients are throughly incorporated. Then make balls of approximately 30g by rolling the mix with the palms of your hands. Transfer to a tray and repeat with the rest of mix
Bring a frying pan with about 3cm of olive oil to medium high heat. Fry the tater tots in batches of 4, making sure they cook in all sides until golden brown, this should take about 5-6 minutes. Transfer them to a kitchen paper to drain off excess heat and enjoy while hot !

For the best crispy tater tors I recommend using a starchy potato variety such as russets
Once made, you can freeze the tater tots for up to 1 month and then fry them once you are ready to consume them
