Halloumi tapioca bites

A deliciously crispy and cheesy snack

This easy 3 ingredient recipe is inspired by Brazilian “dadinhos de tapioca” and are a delcious snack for cheese lovers. Once cooked in the airfryer the tapioca squares become really crispy on the outside while maintaining a chewy and cheesy interior, making them an addictive snack !

While they traditionally made with Brazilian coalho cheese, I substituted with hallumi cheese which has very similar characteristics to yield a simmilar result. Another great option is also grated Parmesan cheese which tends to give a meltier and stretchier result compared to halloumi and absorbs the liquid more quickly as well.

I recommend serving them with a tangy or spicy dipping sauce such as spicy sriracha mayo, alioli or aji verde. They are perfect for a dinner party entree, dinner side or even a mid afternoon snack.

Ingredients

  • 250g granualed tapioca/ tapioca pearls

  • 450g whole milk

  • 300g halloumi cheese

Method

  • Grate the halloumi block with the coarse side of a grater into a bowl. Then add the tapioca balls, and salt to taste and mix well.

  • Bring the milk to a boil in a pot and then remove rom the heat. Immediately pour over the halloumi and tapioca mix while quickly mixing with a spoon. Leave to cool down for 35-50 minutes until it thickens while the tapioca absorbs the liquid.

  • Take a tin ( I used a 20x20cm brownie tin) and line it with cling film. Spread the cheese tapioca mix and give a few taps against the counter to even it out. Cover the top with cling film, transfer to the fridge and rest it overnight.

  • Next day remove the cling film, it should have hardened to a block and with a sharp knife cut it into squares.

  • Transfer the tapioca cheese squares to an airfryer and bake at 190C for approximately 150C until golden brown.

FAQS and Tips

  • You can brush the tapioca cheese squares with some olive oil to help them crisp up in the airfryer

  • Make sure you use small granulated tapioca, which can be found in Indian or Brazilian supermarkers or even Amazon

  • Once ready the squares can be frozen for up to two months until ready to cook in the airfryer
