Crispy halloumi potatoes

Inspired by the viral TikTok parmesan potato recipe, I bring you these halloumi crispy potatoes that will become your next obsession! You only really need 3 ingredients, and they are really simple and straightforward to prepare. Serve them as a side dish or snack in any dinner party and I promise they will be a major hit.

This recipe is for those obsessed with potatoes, cheese and anything crispy like me! The grated halloumi crisps up and becomes one giant lacy, crispy base for the potato on top.

Ingredients

  • 1 block of halloumi cheese (220g)

  • 12 miniature potatoes

  • 1 tbsp olive oil

Method

  • Wash your potatoes and add them to a pot of boiling water with 1 tbsp of salt. Boild for approximately 25min until fork tender.

  • Drain the potatoes and transfer them to a bowl. Drizzle some olive oil on your potatoes and season with your herbs of choice (optional)

  • Grate your halloumi in a bowl and then prepare a baking sheet with some parchment paper. Add your halloumi in small circles and then place a potato on top. Use the back of a heavy measuring cup or ramekin to smash each potato.

  • Bake the potatoes in a preheated oven at 180C for approximately 15-20min until the halloumi crisps up and becomes golden brown on the edges. Keep a close eye to make sure the cheese doesn’t burn!

  • Remove from the oven and serve warm

FAQS and Tips

  • What potato is best for this recipe? I recommend using miniature potatoes as that gives the perfect size for a crispy halloumi biscuit once you mashed them

  • You can have these with any dipping sauce although I love them with some spicy mayo or ali oli

  • For optional herbs and seasoning I recommend garlic powder, onion powder, chilli powder, Italian seasoning, rosemary or thyme!
