Halloumi protein bagel

My take on the viral greek yogurt bagels!

These 3-ingredient bagels are protein packed (20 grams per bagel!!), and so easy to make (no yeast, no boiling, no fancy mixer) that you will never go back to store bought bagels again. They make the perfect healthy breakfast, and I love to top them with some butter and hot honey or avocado and salt flakes.

If the Greek yogurt bagels have taken over your Instagram or TikTok feed, you are not alone. I had of course to jump on the trend and do my own take on the recipe by substituting the Greek yogurt with a higher protein alternative: Skyr! And to add more flavour and protein to the dough I have included halloumi cheese in the dough. This makes the bagels a fantastic hunger crushing combo as they have the perfect balance of protein, carbs and fat.

While they don’t have the same texture as traditional New York bagels, which include yeast in their dough and are boiled before baking - these are tasty in their own way. Make sure to toast the before adding your toppings for the best flavour.

🍽️ 4 bagels

Ingredients

  • 290g skyr/fage yogurt

  • 145g halloumi

  • 245g self raising flour (or 245g flour + 1tsp baking powder)

Method

  • Start by grating the halloumi with the coarse side of a grater into a bowl

  • Take a big bowl and add the shifted flour and yogurt. Start mixing it with a spoon and then knead with your hands for 5 minutes until it becomes a dough. It is important to knead for at least 5min so the gluten develops and becomes stretchy, which will give your bagels the best texture. Now you can rest the dough for 10-20 minutes and then knead for 3-5 more minutes.

  • Divide the dough into 4 equal pieces. Now it is time to make the bagels, by rolling the dough into a think sausage, then join both ends of the dough to form a bagel shape. Place on a tray covered with parchment paper and repeat until 4 bagels are formed. This step is optional but you can brush the tops of each bagel with egg wash or butter and sprinkle with sesame seeds and salt flakes.

  • Bake the bagels at 180C for 20min until they turn golden brown. Once ready to eat cut in half, toast them and add your favourite toppings.

FAQS and Tips

  • Once baked these can be frozen and then defrosted in the toaster

  • These bagels can also be cooked in the airfryer, 12 min at 175C turning halfway.
