Dulce de leche Tiramisu
One of the best Tiramisu flavours you need to try!
Dulce de leche is one of my all time obsessions! It´s like the sexier cousion of toffee sauce and makes the perfect addition to lots of desserts specially those that are creamy based. And don´t get me wrong I love a good traditional tirmaisu but this recipe with dulce de leche is just as good I would dare to say.
Ingredients
☕️For the tiramisu
200g ladyfingers/savoiardi
4 egg yolks
200g mascarpone
180g dulce de leche
250g double (heavy) cream
2 cups brewed coffee
🍌For the banana layer
2 large bananas
20g butter
35g brown sugar
2 tbsp dark rum
1 tsp salt
Method
🍌For the banana layer
Peel banana and cut into thin slices
Over medium heat melt butter, add brown sugar, salt and swirl until dissolved
Add bananas and cook on each side
Take from heat and add rum. Return back to heat and cook until it evaporates and banana is caramelised
Let it cool completely
☕️For the cream layer
Place egg yolks, dulce de leche and mascarpone in the bowl and whip until creamy
In another bowl whip the cream
Then fold the cream into the mascarpone mixture, do it very slowly
✨Assembly
Spread a very thin mascarpone layer evenly over the base. Cover with the ladyfingers dipped in the coffee for a couple of seconds on each side. Spread a thick layer of mascarpone cream, then ladyfingers dipped in coffee and then the caramelised bananas. Spread the rest of mascarpone cream evenly
Place in the fridge overnight
Before serving dust cocoa on top
FAQS and Tips
Can I skip the egg yolks? Yes, you can susbtitute the yolks with 70g of extra double cream
I don´t drink alcohol can I skip the rum? Yes, you can although any alcohol in it should evaporate due to the cooking temperature
I cannot find dulce de leche. You can actually make your own dulce de leche by boiling a can of condensed milk for around 3 hours (should be completely submerged in water the entire time).
