Crab rangoon empanadas

The perfect collab between empanadas and crab rangoon wontons!

As both an empanda and crab rangoon lover I though, why not mix both and get the best of both worlds? In this recipe I tech you how to make the easiest 3 ingredient empanada dough, that gives you the crispiest and most delicious empanadas.

Ingredients

For the dough

  • 300g plain flour

  • 2 tbsp olive oil

  • 140g water

For the filling

  • 210g crab meat

  • 170g cream cheese

  • 2 green onion

  • 1 tsp soy sauce

  • 1 tsp garlic powder

  • 2 tsp sriracha sauce

Method

  • Make the dough by adding the flour and olive oil to a bowl and mixing with a spoon. Then add the boiling water and start stirring with a spoon immediately for about 1 min until it starts coming together. Then knead the dough with your hands for about 3minutes until it all comes together into a ball. Cover with some cling film and leave to rest for 20-30min.

  • Meanwhile make your filling. In a bowl add the crab, cream cheese, chopped green onion, soy sauce, garlic powder and sriracha sauce. Mix well with a spoon

  • Flour your kitchen counter and roll out the dough into a thin sheet. Use a 10cm biscuit cutter or bowl to cut out discs. Place 1tbsp of filling in the centre of each disc, wet the edges, and fold in half to seal. Pleate or use a fork to crimp the edges.

  • Add olive oil to a pan and bring to medium high heat. Fry empanadas until golden on each side. Transfer to some kitchen paper to remove excess oil and enjoy hot!

FAQS and Tips

  • You can use imitation crab instead of crab meat for a cheaper and equally delicious version

  • I love having these with sweet chilli sauce since it compliments very well the cheesy and spicy crab Rangoon
