Cheesy chorizo Gnocchi

My favourite gnocchi recipe!

As a good Spaniard I’m obsessed with chorizo and let me tell you this cheesy gnocchi just gets rid another level by adding fried chorizo and manchego 💯

🌱Ingredients

  • 1 pack gnocchi

  • 2 veggie chorizo sausages

  • 1 large white onion

  • 40ml white whine (optional)

  • 3 cloves garlic

  • 1 canned cherry tomatoes

  • 80ml single cream

  • 150g shredded mozzarella cheese

  • 100g manchego, grated

🌱Method

  • Make the manchego crisps by spooning tablespoonsfuls on a baking tray covered with baking paper. Bake at 200C for 5-8 minutes until golden brown and crips. Let them cool for 10 minutes on the baking tray before removing

  • Cook the gnocchi in a pan with salted boiling water for a couple of minutes until they start floating

  • Pan fry the chorizo with 1tbsp olive oil until golden

  • In a pan add 1 tbsp of olive oil and fry the chopped onion until it becomes translucent. Deglaze the pan with the white whine add the chopped garlic and cook for one more minute. Finally add the tomatoes, season and cook at medium heat for 10 min

  • Add the cream, blend with a hand blender and add the chorizo, gnocchi and mozzarella to taste. Cook for 2-4min until the cheese melts

  • Serve the gnocchi on a bowl and top with the manchego crips

FAQS and Tips

  • I love using good quality Italian tomatoes as they make a big difference on the flavour of the sauce. If you cannot find these try adding 1/2 tbsp of caster sugar to decrease the acidity of the sauce

  • I cannot find manchego can I substitute it? Yes, other hard cheeses like parmesan or pecorino will work!
