Chocolate plantain empanada

The next viral empanada recipe!

After my VIRAL plantain empanadas I’m coming with a sweet version that will get you even more in love with empanadas ! This simple 4 ingredient recipe is perfect for a sweet treat and works amazing with some ice cream on the side 🔥

🍽️ 4 empanadas

Ingredients

  • 2 ripe plantain

  • 50g cornstarch (US) /cornflour (UK)

  • 2tbsp icing sugar

  • 80g dark chocolate

  • Olive oil to fry (optional)

Method

  • Peel and cut your plantain into big pieces

  • Add peeled plantain to a pot, cover with water and boil for 10 minutes until soft

  • Drain the water, and mash plantain with a fork. Add the cornflour, icing sugar and mix well. Let it rest for 20 min at room temperature

  • Form 4 balls with the plantain dough. Transfer a ball to cling film, cover it  and press down each ball with a dish to make a disc. Add a square of dark chocolate in the middle, fold it in half and press to seal with your fingers, so the chocolate is sealed and does not melt out. You can also use a fork to press the edges of the empanada and help it seal

  • Heat olive oil in a frying pan and fry your empanadas until golden on both sides . Alternatively you can air fry them or bake them in the oven. Dust with icing sugar before serving and enjoy !

FAQS and Tips

  • Instead of frying them you can bake them in the oven at 180C for 15-20min or in the airfryer

  • You can use your favourite chocolate, like white chocolate or almond chocolate
