Cheesy potato pizza

The love child between pizza and potato for the ultimate party snack

I love a good tradigtional Margherita pizza, but sometimes it is good to have a bit of a change and this is the perfect recipe for that. The potato base is soft and pillowy and becomes completely addictive once you add a good measure of mozzarella!

🍕Ingredients

  • 500g peeled potato

  • 60g plain wheat flour (all-purpose)

  • 60g cornstarch

  • 30g Parmesan, grated

  • Salt and pepper

  • 1 tsp garlic granules

  • 3-4 tbsp tomato marinara sauce

  • Shredded mozzarella for topping

  • Chopped basil

🍕Method

  • Cut the potato into cubes and boil in a pot with water until soft. Drain and transfer to a bowl to mash with salt

  • Add the flour and cornstarch to the mashed potatoes and mix with your hands until obtaining a dough. Add the salt, pepper, Parmesan, garlic, and mix well again

  • Transfer dough to an oven tray covered with baking paper and shape into a rectangle

  • Drizzle with olive oil and cover with a tomato marinara. Cook in the oven for 10min at 180C

  • Cover with shredded mozzarella and bake again for 10-15min at 180C until melted and golden brown

  • Add some chopped basil , cut into pieces and enjoy !
