Cheesy potato pizza
The love child between pizza and potato for the ultimate party snack
I love a good tradigtional Margherita pizza, but sometimes it is good to have a bit of a change and this is the perfect recipe for that. The potato base is soft and pillowy and becomes completely addictive once you add a good measure of mozzarella!
🍕Ingredients
500g peeled potato
60g plain wheat flour (all-purpose)
60g cornstarch
30g Parmesan, grated
Salt and pepper
1 tsp garlic granules
3-4 tbsp tomato marinara sauce
Shredded mozzarella for topping
Chopped basil
🍕Method
Cut the potato into cubes and boil in a pot with water until soft. Drain and transfer to a bowl to mash with salt
Add the flour and cornstarch to the mashed potatoes and mix with your hands until obtaining a dough. Add the salt, pepper, Parmesan, garlic, and mix well again
Transfer dough to an oven tray covered with baking paper and shape into a rectangle
Drizzle with olive oil and cover with a tomato marinara. Cook in the oven for 10min at 180C
Cover with shredded mozzarella and bake again for 10-15min at 180C until melted and golden brown
Add some chopped basil , cut into pieces and enjoy !
