Cheesecake banana bread

Best banana bread you will ever try!

As every other person on the internet I’m obsessed with banana bread so I’m always on quest to make new and delicious flavours (remember my dulce de leche one ?). This one is my favourite so far, the cheesecake layer gives such a great texture and flavour 😍

Ingredients

🍌For banana bread

  • 100g melted butter

  • 125g plain flour

  • 1 tsp. baking soda

  • 1/2 tsp baking powder

  • Pinch of salt

  • 160g caster sugar

  • 50g milk + juice of half a lemon

  • 1 tsp. vanilla extract

  • 1 egg plus 1 egg yolk

  • 3 ripe bananas, mashed

  • 80g dark chocolate, roughly chopped

🍰For cheesecake layer

  • 190g cream cheese

  • 1 egg

  • 40g caster sugar

  • 1 tbsp plain flour

🍌Method

  • In a small bowl add the milk and lemon and leave for a couple of minutes so it forms buttermilk

  • In a bowl, whisk together flour, baking soda, and salt

  • In another large bowl, combine sugar, melted butter, milk, vanilla, egg and egg yolk and mix until smooth. Add the mashed bananas and finally the flour mix

  • Make cream cheese filling by mixing all ingredients in a bowl

  • Transfer half the banana bread batter to a bread loaf tin lined with baking paper. Dollop cream cheese filling on top. Top with remaining batter.

  • Bake at 180C until deeply golden for 50min. Let cool at least 20 minutes before serving.

FAQS and Tips

  • Depending on how moist you like it you can leave it for 10 more minutes baking in the oven. If it starts becoming too brown cover it with tin foil while baking
