Burrata & Chorizo gnocchi

The best way to have chorizo in pasta!

One of the things I missed the most when I went veggie was Spanish chorizo, but i recently discovered several veggie brands are making amazing chorizo substitutes that taste just like the real deal.

I’ve been experimenting with it in several recipes and this burrata and chorizo gnocchi is definitely my favourite! The chorizo adds a rich and smokey flavour that goes so well with the creamy and cheesy burrata.

This recipe is very quick and easy as you only need one pan were you sequentially add all the ingredients to make the creamy sauce. It is ready in about 30minutes so perfect for a weeknight dinner.

Ingredients

  • 1 pack of gnocchi for 2

  • 1tbsp olive oil

  • 2 garlic cloves

  • 1 small white onion

  • 40ml white wine

  • 300g canned tomato

  • 1 tsp chilli powder

  • 70ml single cream

  • 50g veggie chorizo, sliced

  • 1 burrata

  • 1tbsp chopped parsley

Method

  • Cook the gnocchi in salted boiling water following package instructions. Drain and reserve some of the cooking water

  • Bring the olive oil to medium high heat in frying pan. Then add the finely minced garlic, onion and cook at medium heat for 10min, stirring every 2min until golden.

  • Add the sliced chorizo and cook 2 more minutes. Deglaze the pan with the white wine and let it evaporate. Stir in the chilli powder, then incorporate the canned tomatoes and cook at medium low heat, covered with a lid for 15min. Make sure to stir every so often so avoid sticking to the pan.

  • Add the gnocchi, cream, half of the burrata and a bit of the reserved cooking water until you get a creamy sauce consistency. Mix well for a couple of minutes with a wooden spoon until everything comes together. Stir in the parsley (reserve some for decoration), season and turn off the heat.

  • Serve hot on a bowl topped with some of the fresh parsley, the rest of the burrata and grated Parmesan (optional)

FAQS and Tips

  • If you don’t drink wine you can substitute with veggie stock to deglaze the pan

  • If you cannot find burrata you can substitute with fresh mozzarella

  • You can substitute the chorizo for any other kind of sausage and add 1 tsp of smoked paprika to make sure you get that smokey flavour
