Brie gnocchi bake

A lovely festive gnocchi bake!

Since we are approaching holiday season, I am showing you how to make this decadent Brie cheese gnocchi bake that I promise will be the star dish of any dinner party ! It is not only easy to make but also packs all the cheesy and umami flavours thanks to the combination of Brie, Red Leicester for a lovely golden colour and mozzarella for the stretchiest texture ! The pillowy gnocchi transform with the indulgent and velvety Brie cheese sauce.

This dish can be served as an appetizer, side or main dish using fresh store-bought gnocchi for a great shortcut to save on time and effort.

Ingredients

  • 400g-450g gnocchi

  • 20g butter

  • Spices: 1 tsp chilli powder, 1 tsp garlic salt, 1 tsp smoked paprika

  • 13g plain flour

  • 280g milk

  • 125g Brie, rind removed

  • 125g shredded red Leiceser

  • 125g shredded mozzarella

Method

  • Cook and drain your gnocchi in salted water following package instructions .

  • In a pan over medium heat, melt your butter, then add in your spices and toast for 1 minute until fragant

  • Add in the plain flour and cook while stirring for 2 minutes. While stirring constantly with a whisk or spatula to avoid lumps, slowly add in your milk. Once the sauce has thickened up remove from the heat. Add your brie cheese and 2/3rd of your red Leicester and mozzarella and mix well into the sauce

  • Add the drained gnocchi into your cheese sauce and stir well to combine. Here you can adjust the amount of gnocchi you add depending on how cheesy you want your dish to be!

  • Transfer gnocchi mix to a baking dish, top with the remaining shredded cheese that you has set aside and bake in a pre heated oven at 180C for 20 minutes and then broil for 5 mins or until the cheese is melted and golden brown.

FAQS and Tips

  • If you are feeling extra fancy I recommend adding some home made caramelised onions to the gnocchi mix before baking !

  • Brie can be easily substituted for camembert cheese and red leicester can be substituted with cheddar or colby jack
