The new viral crispy potato recipe
If you became obsessed with the crispy TikTok viral Parmesan potatoes I bring you the Xmas holiday version with Brie cheese. And I dare to say they are even better than the original recipe.
By layering the brie on a baking pan you achieve a dreamy crispy, crunchy and flavourful cheese bead on which to lay the herbed roasted potatoes. These are the perfect side dish for any dinner and honestly they are so addictive you can just eat them by themselves with some ali oli or mayo!
You can also cut them into square and they would also be fabulous served as finger food to pass around at a party!

🍽️ 2-3 portions
Ingredients
1 small wheel of Brie cheese
10 baby potatoes
1 tbsp olive oil
1 tsp Italian herbs
1 tsp garlic powder
Bake for 20-25min at 180C (grill on).
Method
Cut the Brie well into thin slices
Take the potatoes, wash them and pierce them with a fork. Transfer them to a bowl and microwave for 6minutes until partly tender (alternatively you can parboil them for 15min). Cut potatoes in half, add the olive oil, herbs and season
Arrange the cut Brie onto a baking tray covered with parchment paper to form a rectangle. Add the potato halves on top to form several rows
Bake at 180C for 20-25min. The Brie will start bubbling up and becoming foamy, this is the fat separating. Remove from the oven, leave to cool for 5 min and then incline the baking tray to remove the excess fat. Cut into squares with a knife and enjoy !
