Boursin truffle filo pie

A conforming and nourishing one pot crispy filo pie !

It is officially fall, days are getting shorter and colder, which means it is the perfect time to make this comforting, and nourishing one pot filo pie. The secret ingredient to add flavour and a creamy texture is Boursin Truffle cheese. I have been a long time fan of Boursin cheese, so when I heard they had a truffle version I had to try it, and it was love at first sight (or should I say taste?)!

Not only this pie is incredibly delicious but also very nourishing and packs 6 of your 5 a day, and plenty of protein thanks to the butter bean filling. Furthermore, the filling is gluten-free so you can use GF pastry if you are coeliac or gluten intolerant.

This recipe is all made in one pan so it requires minimal effort and time, and it is incredibly versityle so it makes for the perfect meal after a long day at work or an impressive dinner dish if you have guests coming over!

Ingredients

  • 150g Boursin Truffle

  • 2 leeks, finely sliced

  • 2 garlic cloves, finely chopped

  • 250g mushrooms, chopped

  • Bunch of fresh thyme

  • 100g single/double cream

  • 700g butter beans

  • 200g filo pastry sheets

  • 2 tbsp melted butter

Method

  • Place your Boursin Truffle in the middle of a baking dish. Then scatter around the chopped leeks, garlic, mushrooms, thyme, cream and season to taste.

  • Cover your dish with a lid or tin foil and bake in the oven at 180C for 35min.

  • Remove dish from the oven break apart the Boursin with a spoon, and mix it well with the rest of ingredients.

  • Add in your rinsed beans into the dish and mix well again.

  • Cover your pie with the filo pastry sheets by scrunching them with your hands and laying them on top of the pie until it is completely covered.

  • Brush the filo pastry with oil or melted butter and then bake in the oven at 170C for about 20-25 minutes until golden brown. Remove from the oven and enjoy while hot!

FAQS and Tips

  • You can prep the pie flling 1-2 days in advance and the store it in the fridge until you are ready to bake it with the filo pastry

  • You can substitute the filo pastry for cut up squares of puff pastry.
