Sweet potato & caramelised onion pasta

This incredibly tasty and CREAMY pasta recipe takes less than 10 minutes to put together thanks to @plantastic_uk sweet potato pasta and caramelised onion sauce.
You can find this sauce along with 2 other flavours at selected @tescofood stores (subject to availability). You would never guess they are PLANT-BASED, plus this sauce is low in sugar and makes for 1 of your 5 a day đź’Ż

🍝Ingredients
• 1/2 tbsp olive oil
• Bunch of fresh sage
• 20g hazelnuts
• 240g fresh pappardelle pasta
• 1 jar @plantastic caramelised onion and sweet potato pasta sauce
• 30g vegan Parmesan
🍝Method
• Add the olive oil to a frying pan and bring to medium heat. Add the sage leaves and chopped hazelnuts and cook while tossing until golden and crispy for about 3 minutes
• Cook the pasta in salted boiling water until al dente. Drain and reserve boiling water
• Return pasta to a pan, add the Plantastic sauce and some pasta water and stir at medium heat until creamy. Add the grated vegan Parmesan and half of the hazelnut and sage leaves
• Serve the pasta topped with the rest of the hazelnut and sage and some freshly grated Parmesan on top
